Banana and walnut loaf

Thanks to the lovely Aisha for this delicious recipe. I don’t usually enjoy banana bread but the addition of walnuts and chocolate chips really adds an extra something to this cake so that even my husband (another non-fan of banana bread) enjoyed it.

I subbed the sugar for Stevia making this a pretty healthy cake: no sugar and no butter as this cake uses olive oil.

Tip: For the bananas, if you have bananas that are starting to get a bit too soft, freeze them in their skins until you want to make banana bread. Just remove from the freezer, leave to soften up a bit on the counter top or nuke for 20-30 seconds in the microwave and then peel and mash. Be warned, they do go black in the freezer and are not really suitable for eating as they are but they are still perfect for baking.

Chocolate & Walnut Banana Bread

Ingredients

1 cup mashed banana
3/4 cup (165g) caster sugar
2 eggs, beaten lightly
1/4 cup (60ml) extra light olive oil1/4 cup (60ml) milk
1 1/3 cup (200g) self-raising flour
1 tbsp cocoa powder (optional)
3/4 cup (90g) coarsely chopped walnuts
1/4 cup (45g) chocolate chips

Directions

1. Preheat oven to moderate (180C/160C fan-forced). Grease 14cmx21cm loaf pan
2. Combine banana and sugar in a large bowl; stir in eggs, oil and milk. Add flour, nuts and chocolate; stir until combined.
3. Spread mixture into prepared pan; bake, uncovered, about 1 hour. Stand bread in pan 5 minutes; turn onto wire rack to cool.

I baked mine in a silicone loaf mould so it was very easy to remove from the mould.

    Try it Um AlMujahid – the choc really is a wonderful addition.

    FF – I only read about it recently! I had been holding on to aging bananas, nobody would eat them and they would end up in the bin. Now I freeze just before they get too soft so they don’t get wasted. Genius!

    Also, can we use those chocolate drinking powders (like Boost, Milo, Horlicks, etc..) for this?

    and, self raising flour = all purpose flour?

      If you use the chocolate drinking powders like Milo, there will be less of a chocolatey taste – the cocoa is optional anyway so just leave it out if you don’t have it.

      Instead of self-raising flour try 200g all-purpose flour + 2 teaspoons baking powder.
