Cheese Muffins

A simple but delicious and versatile recipe from the Pioneer Woman, I have used this recipe for Cheese muffins (pictured below) several times and they are always a hit in this house.

The recipe calls for an American cheese,  Colby-Jack which I have never bought but I assume it is similar to English Cheddar. I generally use whatever cheese I found in the fridge such as a half-half combination of Hungarian Kashkaval (a mild flavoured semi-hard cheese) and mature English Cheddar. It’s the sort of recipe you can really use your imagination on and try different cheeses – flavoured cheeses, perhaps a little Camembert or Brie, add a sprinkle of cayenne or chilli and some garlic powder… limitless options.

The ingredients as displayed on the Pioneer Woman website:

Fig’s Cheese Muffins

1 1/2 cups flour
1 1/2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 cups shredded colby-jack cheese
1 cup milk
1 egg, beaten
1/4 cup (1/2 stick) melted butter

Combine the dry ingredients and then stir in the cheese, milk, egg and butter.  Put dollops of the mixture into a 12 hole greased  muffin tin and bake for 20-25 mins at 375F. Best eaten warm.

    These are a hit in my home too. But I tend to use less butter. I’m right in the middle of making your lemon meringue pie!!! I have it loaded up in another window! 😉

      As for the cheese muffins – they are sooooo good aren’t they?! Especially more or less straight from the oven!
